Dead ball penalty on last play of the game?

At the end of the epic Saints-Vikings game last night, various Viking players removed their helmets after the winning TD. Ordinarily this would incur a 15-yard Unsportsmanlike Conduct penalty (Rule 12 Section 3 Article 1 h) on the enusing kickoff.

No flags appear to have been thrown on the play, which was a little odd considering Diggs not only removed, but threw his helmet. Various things were missed late in that game!

Had there been flags thrown, would there have been an untimed down? i.e. the Vikings would have had to kickoff.

To the best of my knowledge the answer is no. I officiate high school football using the National Federation of High School rules and we don't have untimed downs on unsportsmanlike/dead ball fouls.

I guess if the penalty had been called, they would have moved back 15 yards on the PAT/2 point conversion.

No, since the infractions would have occured after the TD was scored and after time had expired.

If the defense had removed their helmet(s), would there have been an untimed down? I've always heard it said that a game cannot end on a defensive penalty.

That's kind of like the idea that the ground can't cause a fumble. Of course it can, if the runner isn't down because of defensive contact.
A game can end on a defensive penalty if the penalty is declined.
